In the Kitchen with Nick Pearson

Our first RDU on Stage cooking show, and let me just say, Rachael Ray makes this look so easy. In any case, check out what Nick Pearson (CFRT’s SHREK) is cooking up for us (recipe below).

“IF DESIRED” Chocolate Mug Cake with Fresh Chocolate Whipped Cream
For the chocolate mug cake:
1 tbsp softened, unsalted butter
1/2 tbsp canola oil
1 tbsp milk
2 tbsp sugar
1 tbsp brown sugar
1 tsp vanilla
1/2 tsp baking soda
2 tbsp cocoa powder
3 tbsp all-purpose flour
2 tbsp semi-sweet chocolate chips (extra, if desired)
1 tbsp peanut butter (optional)

For whipped topping:
1/4 cup whipping cream
1 tbsp sugar
1/4 tsp vanilla
1/2 cocoa powder
Crushed chocolate sandwich cookies (optional)

In a mug, combine butter, oil, milk, sugars, and vanilla until smooth. (If using peanut butter as well, add at this time, too.)
Add baking soda, cocoa powder, and flour. Mix until incorporated.
Stir in chocolate chips.

In a separate small bowl, using electric beaters (or a whisk or fork, if you don’t have electric beaters) beat whipping cream, sugar, cocoa powder and vanilla until stiff peaks form. Lightly fold in crushed cookies, if desired.

Microwave mug for 45 seconds to 1 minute. Stir and add extra chocolate chips, if desired. Add dollop of freshly made whipped cream and ENJOY!
